Total Time 1 hr 15 mins

  • 1 pound homemade or store bought boudin sausage
  • 1 1/2 cups panko bread crumbs
  • 2 large eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon hot sauce
  • Vegetable oil, for deep frying
  • 1/2 teaspoon garlic powder
  • 1/2 Cup ketchup
  • 1 cup mayonnaise
  • 1 teaspoon salt
  • 1/4 Cup oil
  • 1 teaspoon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon pepper
  • 1/4 teaspoon hot sauce
  • 2 tablespoons water

  • Take a shallow bowl and into it spread the bread crumbs, evenly.
  • Take another bowl and into it add the eggs. Add the salt, cayenne, and hot sauce into the bowl and combine well.
  • Now, form ½ inch balls from the boudin sausage.
  • Take a large and deep frying pan or cast iron and into it pour the oil. Remember, the oil should be able to emerge the boudin balls halfway.
  • Heat the oil over medium heat until it starts to shimmer.
  • Now, coat the balls evenly with the prepared egg mixture at first and then cover them with the bread crumbs evenly. Follow the same with the other balls too.
  • Now place the balls in the pan, fewer at a time and fry them for about 3 to 5 minutes or until they are light brown.
  • When the balls are done remove them and drain them on paper towel.
  • To prepare the comeback sauce, take a large bowl and into that combine the garlic powder mustard salt and pepper. Mix well.
  • Now, add the mayonnaise, ketchup, oil, water, Worcestershire sauce, and the hot sauce into the bowl.
  • Mix it well using a wire whisk until all of them are well combined and fully incorporated.
