Punch Bowl Cake

A punch bowl cake is a kind of a trifle that is classically served in a punch bowl.

Ingredients
  

For the cake

  • 1 ½ cup unsalted butter at room temperature
  • 2 tbsp oil
  • 8 ounces cream cheese
  • 2 ¾ cup granulated sugar
  • 6 eggs large
  • 3 cup cake flour
  • ½ teaspoon salt
  • 1tbsp vanilla extract
  • Powdered sugar for garnish

 For the Berries

  • 1-pint sliced strawberries
  • 3 tbsp granulated sugar
  • 1 tbsp lemon juice

For the Filling

  • 2 cream cheese blocks
  • 1 cup powdered sugar
  • 4 teaspoon melted strawberry preserves

For the topping

  • 1 ½ cups whipped cream

Instructions
 

For the cake

  •  Preheat your oven to 375 degrees F and spray the pan with a non-stick baking spray.
  • In a bowl, add butter, cream cheese, oil, and beat at high speed for 2 minutes with a mixer.
  • Slowly add sugar and beat for another 7 minutes or until the batter is very pale yellow and fluffy.
  • Next, add eggs one at a time and combine well after each addition.
  • Turn your mixer down to its lowest speed, and slowly add flour into the batter into two increments then add salt. Do not over beat.
  • Lastly, add vanilla extract and mix well until combined and turn off the mixer.
  • Pour the batter into the prepared pan, and bake for 1 hour 15 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool the cake for 10 minutes before inverting it out on a serving plate.
  • Sprinkle some granulated sugar and cut the cake into cubes once it’s cooled down at room temperature.

For the Berries

  • In a large bowl, add sliced strawberries, granulated sugar, and lemon juice.
  • Toss together and set aside until natural juices develop.

For the Filling

  • Add cream cheese, powdered sugar, and melted strawberry preserves in a large bowl and beat with an electric mixer on medium speed until blended and smooth.
  • Add food coloring if you want a pink color. Add ½ cup of whipped cream. Stir it properly and keep aside.

For Assembling

  • Add cake cubes to the bottom of a large deep baking dish and sprinkle with some orange juice.
  • Spread a layer of filling next then add macerated strawberries then top with whipped cream layer.
  • Repeat the steps as much as possible until you reach the top of the dish then top with whipped cream and garnish with fresh strawberries. Refrigerate until serving.
