Strawberry Vinaigrette

We are going to see how to prepare an easy and healthy  Vegetarian Bowl Salad along with the Strawberry Vinaigrette Salad Dressing. This Salad is fully loaded with veggies and protein to give you energy. I’m sure you are going to love making it and also would devour it. 

Strawberry Vinaigrette

How To Make Strawberry Vinaigrette ?


  • 2 Table-spoon extra virgin olive oil.
  • 1 small red onion, cut into wedges
  • 2 large sweet potatoes
  • 2 T-spoon chili powder
  • ¾ T-spoon Salt
  • ¾ T-spoon Black pepper
  • 1 small broccoli or cauliflower head
  • 1 small bunch of kale with large stems removed
  • 3 Table-spoon lemon juice
  • 3 Table-spoon Tahini
  • 1 Clove garlic, minced
  • ½ – 1 Tablespoon ground cumin
  • ¼  T-spoon Kosher Salt
  • 4 hard boiled eggs (even soft boils eggs would do)

So let’s see how to make it:

Step 1-: Preheat the oven to 400 degrees Fahrenheit and place a rack in the center of the oven.

Step 2-: Coat a baking sheet with a non-stick spray and set aside.

Step 3-: On the baking sheet, place the onions and the sweet potatoes. Make sure that the skin side of the potatoes comes up.

Step 4-: Drizzle the onions and the potatoes with 2 T-spoon Olive oil. Make sure that the skin of the potatoes is covered fully by the olive oil. 

Step 5-: Add 1 T-spoon chili powder, ¼ T-spoon Salt, and ¼ T-spoon pepper to the baking sheet. Make sure the onions and the potatoes are well coated with them.

Step 6-: Bake it for over 10 minutes.

Step 7-: Now, while the potatoes and the onions are baking, chop the broccoli or the cauliflower into florets.

Step 8-: Remove the baking sheet from the oven and flip the potatoes to the other side. Also, add the broccoli/cauliflower to the baking sheet by moving the potatoes and the onions on one side.

Step 9-: Drizzle the broccoli/Cauly with 2 T-spoon of olive oil and also add ¼ T-spoon of salt, ¼ T-spoon of pepper and the remaining 1 T-spoon of chili powder. 

Step 10-: Coat the broccoli/cauliflower well with the ingredients. Then put the banking sheet in the oven again. Bake for additional 20-25 minutes or until the potatoes become soft and the other vegetables become crisp-tender.

Step 11-: Remove the pan from the oven and now, place the kale on top of the vegetables. 

Step 12-: Drizzle the remaining 2 Table-spoon of olive oil, and sprinkle it with the remaining ¼ T-spoon of salt and ¼ Tablespoon of pepper. Make sure the kale is coated well with the ingredients. Make one single layer of it on the pan.

Step 13-: Keep the pan in the oven and bake for about 5 more minutes or until the kale becomes lightly crispy and is softened. 

Step 14-: Remove the pan from the oven and set is aside for cooling.

Step 15-: In a large bowl, add the lemon juice, tahini, garlic, cumin and salt.

Step 16-: Add 2 T-spoon of hot water to the bowl. Whisk it well till properly combined.

Step 17-: Add salt and cumin if needed.

Step 18-: Once the vegetables are cooled, cut the sweet potatoes into small, bite-size pieces. Also, roughly chop the kale. Slice the hardboiled eggs into half.

Step 19-: Add the combined mixture to the salad and top it with the eggs. 

For preparing the Strawberry Vinaigrette Salad Dressing-


  • 1 cup of sliced strawberries
  • 3 Table-spoon of extra-virgin olive oil.
  • 1 Tablespoon of balsamic vinegar
  • 1 Tablespoon of honey
  • Salt and pepper as per taste.


Step 20-: In a small bowl, add vinegar and honey and whisk them well. 

Step 21-: Add the strawberries to the bowl and make sure it is fully coated with the mixture. Let it rest for about 30 Minutes.

Step 22-: In a blender or a food processor, add all the ingredients and blend them until smooth. Taste the mixture and add the seasoning if necessary. 

The  Vegetarian Bowl Salad with Strawberry Vinaigrette Salad Dressing is ready to serve and devour onto!
