Tasty Punch Bowl Cake Recipe

With the arrival of Spring, comes the stock of juicy red strawberries in the fruit market. 

No one could ever deny their love for strawberries and these are something I could die for. I finish at least a box or two of strawberries every day without any guilt.

Keeping up with my love for baking, I constantly hunt for recipes that incorporate the taste of these sweet, juicy strawberries and give the outcome which is totally unexpected, surprising, and delightful.

This year, I came across the recipe for Strawberry Punch Bowl Cake in a food magazine.

What intrigued me most was the picture of this dessert which had different layers of whipped cream, strawberry, and cake. I wondered if the picture is so appealing then the final outcome would be something to die for.

Being so confident about my baking skills, the first time I made this cake was for a dinner get together at my place. 

That was the impulsive decision I took and halfway through the preparation, I was unsure of the outcome. Fortunately, it came out great and stood up to my expectations. My guests were all high with praises for my baking. 

I believe they only visit my place for having the lovely desserts (Just Joking).

So, here I am with the delicious recipe of Strawberry Punch Bowl Cake.

What is a Punch Bowl Cake?

A punch bowl cake is a kind of a trifle that is classically served in a punch bowl. 

It consists of a series of layers, including a layer of sponge or yellow cake, a layer of fruit, a layer of pudding or gelatin, and a topping of whipped cream. This dessert is typically served chill.

Strawberry Punch cake contains Strawberry as a fruit along with strawberry cream cheese layer which makes it simply irresistible.

How to make Strawberry Punch Bowl Cake?

Don’t get confused with the layers. It looks creative and might sound daunting but is actually pretty simple to make. Just lots and lots of whipped cream and you are great to go.

Ingredients Required

For the cake –

  • 1 ½ cup unsalted butter at room temperature
  • 2tbsp oil
  • 8 ounces cream cheese
  • 2 ¾ cup granulated sugar
  • 6 eggs large
  • 3 cup cake flour
  • ½ teaspoon salt
  • 1tbsp vanilla extract
  • Powdered sugar for garnish

 For the Berries –

  • 1-pint sliced strawberries
  • 3tbsp granulated sugar
  • 1tbsp lemon juice

For the Filling –

  • 2 cream cheese blocks
  • 1 cup powdered sugar
  • 4 teaspoon melted strawberry preserves

For the topping –

  • 1 ½ cups whipped cream
Directions

Let’s now look at the process to make our tasty punch bowl cake.

For the cake-

  1.  Preheat your oven to 375 degrees F and spray the pan with a non-stick baking spray.
  2. In a bowl, add butter, cream cheese, oil, and beat at high speed for 2 minutes with a mixer.
  3. Slowly add sugar and beat for another 7 minutes or until the batter is very pale yellow and fluffy.
  4. Next, add eggs one at a time and combine well after each addition.
  5. Turn your mixer down to its lowest speed, and slowly add flour into the batter into two increments then add salt. Do not over beat.
  6. Lastly, add vanilla extract and mix well until combined and turn off the mixer.
  7. Pour the batter into the prepared pan, and bake for 1 hour 15 minutes or until a toothpick inserted in the center of the cake comes out clean.
  8. Cool the cake for 10 minutes before inverting it out on a serving plate.
  9. Sprinkle some granulated sugar and cut the cake into cubes once it’s cooled down at room temperature.

For the Berries –

  1. In a large bowl, add sliced strawberries, granulated sugar, and lemon juice.
  2. Toss together and set aside until natural juices develop.

For the Filling –

  1. Add cream cheese, powdered sugar, and melted strawberry preserves in a large bowl and beat with an electric mixer on medium speed until blended and smooth.
  2. Add food coloring if you want a pink color. Add ½ cup of whipped cream. Stir it properly and keep aside.

For Assembling –

  1. Add cake cubes to the bottom of a large deep baking dish and sprinkle with some orange juice.
  2. Spread a layer of filling next then add macerated strawberries then top with whipped cream layer.
  3. Repeat the steps as much as possible until you reach the top of the dish then top with whipped cream and garnish with fresh strawberries. Refrigerate until serving.

Some Important Tips

Make sure, you refrigerate the punch bowl cake properly before serving.

Cake recipe should be baked in an 8 X 8 pan.

Spread all the layers evenly and make sure you don’t miss out on any.

You can skip adding strawberry preserves if you don’t have it. Your Strawberry Punch Bowl Cake will still taste great.

You cannot store this cake for long as the whipped cream will start getting sour and the ingredients will melt out into one another thus, spoiling the layers.
