Ingredients Required

For the CAKE LAYERS-

  • 3/4 cup unsalted butter at room temperature
  • 1 1/2 cups sugar
  • 3/4 cup cream, room temperature
  • 1 T-spoon vanilla extract
  • 1 Tablespoon key lime zest (3–4 key limes)
  • 6 large egg whites, room temperature, beaten lightly
  • 2 1/2 cups all purpose flour
  • 4 T-spoon baking powder
  • 1/2 T-spoon salt
  • 1/2 cup milk, room temperature
  • 2 Table-spoon water, room temperature (90ml) lime juice
  • 6 T-spoon key lime juice

For  CRACKER CRUMBS-

  • 1 cup cracker crumbs
  • 1 Tablespoon sugar
  • 3 Table-spoon melted butter

For the FROSTING-

  • 3/4 cup salted butter
  • 3/4 cup shortening
  • 6 cups granulated sugar
  • 2 1/2 Table-spoon Key lime juice
  • 1/4 cup sweetened condensed milk
  • Yellow and leaf green icing colors

For the additional GLAZE-

  • 1/4 cup sweetened condensed milk
  • 1/2 cup granulated sugar
  • 2 Table-spoon Key lime juice
  • 2 lime slices, quartered

Now let’s see the steps below to make this beautiful cake:

Step 1-: Pre Heat the oven to 350 degrees Fahrenheit. 

Step 2-: Line the bottom of three, 8-inch cake pans with parchment paper and grease the edges.

Step 3- In a large bowl, beat the butter and sugar till light in color and a little fluffy, for about 3 minutes.

Step 4-: In the same mixture, add the sour cream, vanilla extract and key lime zest and blend till combined.

Step 5-: Add the egg whites in 2 batches, mic it till it combines after every addition. Scrape down the edges of the bowl to make sure that everything is combined well.

Step 6-: Mix flour, baking powder and salt in a medium bowl. 

Step 7-: Now, mix the milk, water and the key lime juice in a small measuring cup.

Step 8-:. Add ½ of the flour mixture to the batter and mix till combined. Also, add the milk mixture to the batter and mix till combined. At last, add the remaining flour mixture and mix until it is smooth. Scrape down the edges of the bowl to confirm everything is being combined.

Step 9-: Divide the batter equally between the already prepared and ready cake pans. Bake for 22-24 minutes, or until a pick inserted within the middle comes out with many crumbs onto it.

Step 10-: Take out the cakes from the oven and let it cool down for 3-4 minutes, then remove from the pans to a cooling rack to finish cooling.

Step 11-: In a small bowl, mix the cracker crumbs, sugar and melted  butter till they become crumbly, then spread the mixture onto a lined cookie sheet.

Step 12-: Bake it at 350 degrees Fahrenheit for over five minutes, then remove it from the oven and put aside to cool down.

For the Frosting-

Step 13-: To prepare the Frosting, beat butter and shortening along till smooth.

Step 14-: Add about 1/2 the granulated sugar and mix until smooth.

Step 15-: Add the kept lime juice and sweetened condensed milk and combine it together till it becomes smooth.

Step 16-: Add the remaining granulated sugar and mix until smooth. Color the frosting with the yellow and leaf green icing colors. 

Step 17-: Once you are ready to build the cake, take away the domes from the cakes with an rough and serrated knife, so they become flat.

Step 18-: Add the primary layer of the cake to a serving plate or a cardboard cake circle.

Step 19-: Top the cake with a layer of frosting. In order to obtain the frilled edges use the Ateco 844 icing tip.

Step 20-: Top the frosting with about 1/3 of the cracker crumbs.

Step 21-: Add the second layer of the cake and repeat the process with the second layer of cake. Then top the cake with the third layer of cake using the same process.

22. Sprinkle additional cracker crumbs over the top layer of the cake and around the base of the cake, if desired.

23. Mix the additional sweetened milk, granulated sugar and key lime juice in a small bowl, then, using a spoon,  drizzle the mixture around the outside edges of the close. Finish up the cake with the key lime slices.
