When you take out the leftover sauce from the refrigerator you might see that the sauce has become a little chunky, but don’t worry this happens because of the hardening of the butter in the sauce.
Keep the sauce in the microwave for a minute and the butter would soften and the sauce would become smooth again.
Let us now see how to prepare the Buffalo Sauce!
- 10 ounces of red cayenne pepper
- 1/2 cup white rice vinegar or white vinegar
- 1/4 Cup water
- 1 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 butter flavor (Optional)
Now, let’s look at the steps to make this awesome sauce.
Take the cayenne pepper and using a knife, remove the seeds and stems of the peppers. Don’t forget to wear gloves before doing so. Follow same with the other peppers.
Transfer these red cayenne peppers to a food processor and into that add the white rice vinegar, water, and salt.
Process mixture for 2 to 3 minutes or until the mixture gets little chunky.
Now, transfer this mixture into two small jar and cover the jar with a cheesecloth.
Place these jars at room temperature in a dark place and let them ferment for 7 days. Keep stirring the jars every other day. After 3 days you will see, while you stir in the jars, there are small bubbles formed in the jar. This means that the fermentation process has started.
You will also notice that the smell of it has changed and has become more sweeter and pleasant.
After 7 days, transfer this mixture to high speed blender and blend on high speed for about a minute.
One you have blended the mixture you will get more liquid out of the pepper.
Using a mesh sieve, strain the sauce over a bowl and into the bowl are the Paprika and the butter flavor. You can discard the leftover pulp or use it in stir fries, Chili paste, etc.
Transfer the sauce in a small bottle or a clean jar.
