4 Tasty Recipes For Making Frog Eye Salad

What is Frog Eye Salad ?

So you may be thinking that – Why the name is so weird “frog eye salad”?

Actually, it is named after the acini de pepe pasta — it looks like tiny little frog eyes in this salad. Despite the (slightly) creepy name, this salad is one of the most unique pasta salads. It’s a sweet salad that can easily pass as a dessert. So let’s start this recipe.

Recipe 1

Ingredients (Step 1):

● 2 teaspoons salt
● 1 cup white sugar
● 2 tablespoons flour
● 1 ¾ cups pineapple juice, unsweetened
● 2 eggs
● 1 tablespoon lemon juice

Ingredients (Step 2):

● 1 package acini di pepe pasta (16 oz. size)
● Water

Ingredients (Step 3):

● 3 cans mandarin orange slices, drained (11 oz. size)
● 2 cans pineapple tidbits, drained (20 oz. size)
● 1 can crushed pineapple, drained (20 oz. size)
● 1 cup whipped cream or whipped topping
● 1 cup shredded coconut


Prep Time: 15 min
Cook Time: 20 min


Step One: Place all of the step one ingredients except the lemon juice in a sauce pan. Ask an adult to turn the heat to medium and stir until the mixture is thickened. Turn off the heat and add the lemon juice. Let cool to room temperature.

Step Two: Ask an adult to fill a large pot with water and bring to a boil. Add the acini di pepe pasta and cook following package directions. Drain and cool.

Step Three: Put the cooled pasta in a large mixing bowl. Add the cooled sauce from step one. Add all of the step three ingredients except the coconut. Stir together well. Wrap bowl tightly with plastic wrap and put in the refrigerator for one hour or longer (overnight is best).

Step Four: Just before serving, stir in the shredded coconut.

Important: ask an adult for assistance with this recipe. Hot sugar and other ingredients can burn if you’re not careful!

● 8 ounces Acini De Pepe pasta
● 1 cup pineapple juice (reserved from pineapple tidbits)
● 1/2 cup sugar
● 1 tablespoon flour
● 1/4 teaspoon salt
● 1 egg beaten
● 1/2 tablespoon lemon juice
● 22 ounces mandarin oranges (drained)
● 1 (20 ounce) can pineapple tidbits (drained and reserve juice)
● 1 (8 ounce) can crushed pineapple (drained)
● 1 1/2 cups miniature marshmallows
● 3/4 cup shredded coconut
● 1 (8 ounce) Cool Whip

Steps for making it:

Step 1: Cook the Acini De Pepe pasta according to package directions. When done, rinse under cold water in strainer. Let cool.

Step 2: In a saucepan over medium high heat stir together pineapple juice, sugar, flour, salt and egg. Cook and stir constantly until mixture thickens and is smooth. Remove from heat and stir in lemon juice. Let cool.

Step 3: In a large mixing bowl combine the pasta and thickened mixture.

Step 4: Then gently fold in the mandarin oranges, crushed pineapple, pineapple tidbits, marshmallows and coconut. Fold in Cool Whip.

Step 5: Refrigerate until serving.

Hurray! It’s ready.

 In this recipe we will take some time to cook this salad to make it more special. So let’s start.



● 16 ounces Acini De Pepe 1 box Acini De Pepe, cooked and drained
● 1 orange juiced
● 1 lemon juiced
● 1 cup sugar
● 1 Tbs cornstarch
● 8 ounces crushed pineapple 2 cans
● 30 ounces Mandarin Oranges 2 cans
● 16 ounces Cool Whip 1 tub


Prep Time: 25 minutes
Cook Time: 8 hours

Step 1: Cook Acini De Pepe, and drain. Set aside

Step 2: Juice the orange and lemon, and pour into a 1 cup measurer. If it does not fill the cup, add pineapple juice from the can until you hit 1 cup.

Step 3: Heat in a saucepan with sugar and cornstarch until sugar is melted, and sauce is thickened.

Step 4: Mix with Acini de Pepe and refrigerate overnight, covered.

Step 5: Just before serving, drain juice/liquid from mandarin oranges and crushed pineapple.

Step 6: In a large bowl, combine acini de pepe, Cool Whip, and fruit. Stir until combined.

Frog Eye Salad is a a sweet, pudding-based fruit salad that can be made with convenient ingredients or homemade whipping cream, we call it a salad just as an excuse to have two desserts!


Prep Time 20 minutes
Chilling Time 1 hour


For pasta:

● Salt
● 16 ounces acini di pepe pasta

For custard:

● 1 cup sugar
● 2 tablespoons all-purpose flour
● 1 3/4 cups pineapple juice unsweetened
● 2 eggs beaten
● 1 tablespoon lemon juice

For salad:

● 11 ounces mandarin oranges drained
● 20 ounce pineapple tidbits drained
● 20 ounce crushed pineapple drained
● 8 ounce frozen whipped topping thawed
● 1 cup miniature marshmallows
● 1 cup shredded coconut


To make the pasta:

Bring 4 quarts water and 1 tablespoon salt to boil. Add pasta and cook until al dente, about 6 minutes. Drain well and rinse under cold water.

To make the custard:

Step 1: Meanwhile, in a medium saucepan over medium heat, whisk together sugar, flour, 1/2 teaspoon salt, pineapple juice, and eggs. 

Step 2: Cook until thickened, stirring occasionally, about 10 minutes. Remove from heat; add lemon juice, cover, and chill at least 30 minutes.

To assemble the salad:

In a large bowl, combine the pasta, custard, mandarin oranges, pineapple, and whipped topping. Mix well and refrigerate at least 30 minutes or overnight. Before serving, add marshmallows and coconut and toss to combine.

This is one of my best dessert recipes and it is really easy to make. In this article I have discussed all four recipes that I tried and some of them are less time consuming whereas some are more.

You can choose whichever recipe you feel like making. Each has it’s own unique taste but they all share one thing in common- They are really tasty!
