Easy Cassava Cake Recipe

As I said before, I love desserts and always have a nose for new and unique recipes to surprise my loved ones. Here is how I first had cassava cake.
I went out for dinner with one of my friends at a restaurant specializing in European cuisines. I have never tried any dish from this cuisine and am absolutely clueless about the flavors and taste.
Thanks to my friend for forcing me to try the restaurant. It has become my favorite. The first time I went there, she ordered everything for me right from appetizers to desserts and I absolutely loved all of it.

The best part was the dessert which had a Cassava cake. I had a slight knowledge of what Cassava is but never tried the cake.
It instantly got into my list of most preferred desserts and I knew I had to make it at home no matter how difficult the recipe is.
Thanks, to the chef for sharing his recipe with me and made me realize the fact that its not at difficult and all someone requires is sheer love for baking.
So, here I am with the classic recipe of Cassava Cake.

What is Cassava?
Cassava is a long tuberous starchy root also called ‘Yuca’ or ‘Manioc’ that is widely cultivated in tropical and subtropical regions. When dried to a powdery extract, it’s called ‘Tapioca’ tapwhich is used for making pearls like the one usually seen in bubble milk tea.
Fresh as well as frozen Cassava are widely available in the grocery stores.
What is Cassava Cake ?
Cassava cake is a classical Filipino moist cake made from grated cassava, coconut milk, and condensed milk with a custard layer on the top. It is a very famous dish in the Philippines, where people commonly eat it for a light meal between lunch and tea time. It is also served during gatherings and special occasions.
It is also known more rarely as cassava Bibingka or Bibingkang Kamoteng Kahoy, although its English name is more common.

How to make Cassava Cake ?
As daunting as the name sounds, this recipe is pretty simple to prepare. Just assemble your ingredients, play your favorite song, and start preparing this scrumptious cake.

Ingredients Required
- 2 packs grated cassava
- 2 cups coconut milk
- ½ can evaporated milk
- 3 eggs
- ¼ cup melted butter
- 6tbsp grated cheddar cheese
- ½ cup condensed milk
- 14tbsp granulated white sugar
For the toppings
- 2tbsp flour
- 2tbsp sugar
- ½ cup condensed milk
- 2tbsp grated cheddar cheese
- 2 cups coconut milk
Time Required:
Preparation Time – 15 minutes
Cooking Time – 1 hour
Total Time – 1 hour 15 minutes
Here are the steps to make this amazing recipe:
- Combine grated cassava, condensed milk, evaporated milk, eggs, cheddar cheese, and sugar in a mixing bowl and mix thoroughly
until a smooth batter is formed. - Add 2 cups of coconut milk and mix again.
- Grease a baking tray and pour in this batter.
- Pre-heat the oven at 350 degrees F for 10 minutes then put-in the baking tray with the batter for 1 hour.
- Meanwhile, prepare the topping by combining sugar and flour in a heated saucepan.
- Add ½ cup condensed milk and mix properly until smooth.
- Add cheddar cheese and coconut milk. Keep stirring constantly for about 10 minutes.
- Pour this batter over baked cassava cake and spread evenly.
- Separate the egg yolk of the remaining egg.
- Glaze the topping with egg white using a basting brush. Simply dip the brush and egg white and brush it on the cassava cake.
- Set your oven to broil mode and broil the cassava cake until the color turns light brown.
Some Important Tips
If you are using frozen cassava, thaw completely but do not drain. However, if you are using freshly grated one, add about ¼ cups of water to moisten it.
Make sure you use a light-colored baking pan so that the bottom of the cake doesn’t darken too much through the twice-baked process.
If the cake or the topping is browning too fast, tent with a foil.
Do not cover the cake until fully cooled as the escaping steam will cause water puddles to pool on the top.
You can store this cake for up to three days in the refrigerator. Make sure you keep it in an air-tight container and cover tightly to lock the freshness.
You can prepare custard topping or any other topping of your choice. The one I used here is a traditional and original one.
